Crockpot Chicken

 

A chicken in every pot and a car in every garage. President Hoover and I would like to see more simmering chickens! ;-) This dish is easy enough that you will start to add it to your regular routine. Once the chicken is cooked through the bones can be returned to crockpot with plenty of water and you will have easy broth in no time, too.

Ingredients

  • 2 stalks celery, cut into chunks
  • 2 carrots, cut into chunks
  • 1 onion, cut up in large pieces
  • 1 whole chicken, 4-8 pounds, whatever size fits in your crockpot
  • 1 tablespoon kosher salt, more or less

Serving Size: 4 People



 

Preparation Instructions

Turn your crockpot on high and add the celery, carrots, and onions. Place the chicken in the crockpot. Season the chicken inside and outside with the salt, smoked paprika (if using) and black pepper. If you have additional spices or herbs you want to add, go for it!

Cover without adding any water and place on low for 6-9 hours or on high for 3-4 hours. It is done, when the temperature is at least 165 or the meat is cooked through when sliced.

Remove the chicken and allow to rest. Add more water and after eating the meat, add the bones and simmer on low overnight to create a delicious broth.
