Cucumber Sauce

 

A bit thicker then a sauce, but oh so delightful. I grew up with this sauce my Mom adapted and simplified from a Sunset magazine recipe. It is the best little addition for salmon.

Ingredients

  • 1 cucumber, small, peeled
  • ½ teaspoon salt
  • 4 ounces cream cheese
  • 1 teaspoon dill
  • 1 lemon, zest and juice

Serving Size: 2 People



 

Preparation Instructions

Grate the peeled cucumber into a wire mesh strainer. Sprinkle on the salt and allow excess liquid to drain for about 5 minutes.

Meanwhile, whip the cream cheese with the lemon and dill until soft and creamy.

When the cucumber has released much of its liquid, fold into the cream cheese.

Serve with a garnish of dill or lemon.
