Fennel Chicken with Honey Pine Nuts

 

Honey sweetened & buttery pine nuts are kissed with chunks of fresh fennel and drizzled over chicken. It is a simple dish that comes together quickly. We also call for the elusive fennel pollen. This can be found online through www.fennelpollenspice.com. Alternatively, use ground fennel seed, which is much easier to come by and considerably cheaper.

Ingredients

  • 1 tablespoon olive oil
  • 3 tablespoons butter, unsalted
  • 12 ounces chicken, two fillets
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon fennel pollen, or 1 teaspoon of ground fennel seed
  • ½ cup pine nuts
  • ½ lb fennel bulb, chopped
  • 2 tablespoons honey

Serving Size: 2 People



 

Preparation Instructions

Heat a skillet over medium heat with the olive oil and 1 tablespoon of butter. Pound the chicken flat, not thin, just until it is an even thickness. Season each side with salt & pepper and a pinch of the fennel pollen or the ground fennel seed.

Sear the chicken on each side for about 8-12 minutes total, depending on the thickness. It will be done when the chicken feels firm, but not hard. Remove from the pan and cover the chicken to rest.

Add the remaining butter to the pan. Toss in the pine nuts and chopped fennel bulb. Shake constantly until the butter and nuts start to deepen slightly in color, just a minute or so. Pour in the honey, remaining salt & pepper and bring up to a slight simmer.

Pour the sauce on top of the chicken and serve while still hot.
