Ginger Apple Muffins

 

The almond flour and eggs make this a gluten-free, low-glycemic fresh apple start to your day. They are a bit more dense then your average muffin with a lovely chewy texture.

Ingredients

  • ½ cup almond flour
  • ½ cup brown rice flour, or whole wheat flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 2 eggs
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • 1 teaspoon ground ginger
  • ¾ cup apple, finely diced

Serving Size: 3 People



 

Preparation Instructions

Preheat the oven to 350.

Sift together the almond flour, brown rice flour, ground ginger, baking powder and salt.

In a separate bowl, whisk together the eggs, olive oil, and honey.

Toss the apples in the flours and then slowly fold in the egg mixture.

As soon as it is a batter, dollop it in to muffin cups or a mini-muffin tin (as we used in the photo).

Bake for 10-15 minutes for the mini-muffins and 18-25 minutes for the larger muffins. When a toothpick inserted in comes out clean the muffins are done.
