Granola Stone Fruit Bake

 

You know how sometimes you forget about some otherwise beautiful fruit and it starts to look a bit sad and soft? I chop those fruits and bake ’em up. The natural sugars come out meaning no sugar is needed to make these tasty. Even the granola can be whipped up sans sugar, just try this Fresh Apple Granola recipe.

Ingredients

  • 1 cup granola
  • 1 peach
  • 2 plums
  • 2 tablespoons butter, unsalted, or coconut oil

Serving Size: 2 People



 

Preparation Instructions

Preheat the oven to 400.

Toss the granola with the softened butter or coconut oil. Press half of it into the bottom of a small baking dishes.

Slice up the fruit and fill on top of the granola crust. Crumble the remaining granola on top. (Make it up until this point and cover to be baked up the next morning.)

Cover the dishes with lids or foil. Bake for 15-20 minutes until the fruit is bubbling slightly and the top is turning golden. Remove the lid and bake for a few more minutes to toast up the crust.
