Grapefruit Salsa

 

Grapefruit’s unique flavor lends itself well to salsa, especially with a bit of ginger to compliment it. Add sweetener only if your grapefruit is especially sour. A zest of lime will add another nice touch too.

Ingredients

  • 1 grapefruit
  • ½ jalapeno, finely mince, optional
  • 1 tablespoon red onion, finely minced, optional
  • 1 tablespoon cilantro, finely minced
  • 1 teaspoon ginger, fresh, minced fine or pressed
  • ½ teaspoon agave nectar, optional or use other sweetener

Serving Size: 2 People



 

Preparation Instructions

Dice up the grapefruit:
Slice off the top and bottom of the grapefruit and set it up standing flat on a cutting board.

Following the curve of the fruit, cut away the peel and white pith.

Holding over a bowl with a colander set inside, cut along both sides of each segment along the membrane. It will fall out.

Chop up the segments even further into salsa size pieces. Strain the remaining juice.

Toss in the minced jalapeno (to taste- start with a small pinch and taste before adding more), red onions, cilantro, and fresh ginger. Adding more or less to your personal taste. If the grapefruit is too tangy add in a pinch of sweetener such as the agave. Finish with just a pinch of salt, although this is optional if you are serving it with salty chips for example.
