Greek Pilaf

 

Pilaf is made greek with lemon, oregano, and kalamatas. If you want to take it a step further incorporate feta cheese too.

Ingredients

  • 1 teaspoon olive oil
  • ½ onion, chopped
  • 1 carrot, chopped
  • 1 cup brown rice, short grain is perfect for this
  • 2 slices lemon
  • cups broth
  • cup walnuts
  • cup kalamata olives, roughly chopped
  • 1 tablespoon fresh oregano, fresh or 1 teaspoon dry
  • 2 ounces feta cheese, optional

Serving Size: 4 People



 

Preparation Instructions

Warm the olive oil in a saucepan over medium heat. Add the onions & carrots, saute until lightly golden. Add the brown rice and saute for 2-3 minutes until coated and glistening.

Mince up the slices of lemon. Pour in the broth & diced lemons. Bring up to a simmer for 35-45 minutes until the rice is cooked through and the liquid is absorbed. If the rice is done and there is extra liquid, you can always strain off any excess.

Fold in the walnuts, olives, oregano and cheese if using.
