Herb & Goat Cheese Snap Peas

 

Creamy herbs & goat cheese are filled into the open shells of snap peas. If this seems too time consuming, simply prepare the filling like a dip and have diners dip or even fill their own. These are delightful packed in a lunch bag or as a lovely party appetizer. Any herbs that you love will do from dill, parsley, sorrel, basil, rosemary, thyme or even cilantro for a southwest inspired flavor.

Ingredients

  • 4 ounces goat cheese, softened slightly
  • 1 tablespoon lemon juice
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon fresh herbs, finely minced
  • 1 pinch black pepper
  • 12 snap peas, or more

Serving Size: 2 People



 

Preparation Instructions

With a fork, smash together the goat cheese, lemon juice, olive oil, fresh herbs, and black pepper.

If planning to fill the snap peas:
Remove the strings from the snap peas and gently open to reveal the centers. Remove the peas and mash in with the goat cheese filling. Place the filling in a plastic baggie or a decorating piping bag with a wide tip attached. Cut a pea-sized slice into the plastic bag. Squeeze the filling into the open shells.

Alternatively, serve the herb goat cheese in a bowl with the snap peas surrounding it ready for dipping.
