Lavender Honey Syrup

One of the easiest honey infusions, lavender, whether fresh or dry will enhance honey into a sauce worth adding to all types of applications whether it is a cocktail with champagne or a lavender lemonade, start with this simple syrup.

Ingredients

  • ½ cup honey, or agave syrup or brown rice syrup
  • 2 tablespoons lavender, dry or a small bundle of fresh stems
  • cup water

Serving Size: 4 People

Preparation Instructions

Combine the water, honey and lavender in a small sauté pan. Bring up to a simmer and reduce the heat to medium-low. Simmer gently for about 30-50 minutes until you like the flavor of the syrup and can taste the lavender. The syrup should be reduced to nearly the same amount as the original amount of honey you added.

If the lavender flavor is not pronounced enough. Add more lavender, water and simmer longer.

Cool and serve as desired.
