Lemon Broccoli

 

Lemon zest, parmesan & breadcrumbs come together to ‘glam up’ plain broccoli. Leave out the parmesan and use olive oil instead of butter for a vegan option. If you have a brand of gluten-free breadcrumbs you enjoy, those could work well instead.

Ingredients

  • 1 lb broccoli, florets
  • ½ cup water
  • 1 tablespoon butter, unsalted, or olive oil
  • 1 lemon, zest and juice
  • ¼ cup panko breadcrumbs
  • ¼ cup grated parmesan cheese
  • 1 pinch salt, to taste

Serving Size: 2 People



 

Preparation Instructions

Place the broccoli and water in a skillet covered with a lid over high heat. As soon as the water starts to boil, reduce the heat and steam lightly for 3-5 minutes until the liquid is mostly absorbed. Remove the lid, toss in the butter and lemon juice, and allow any remaining water to steam off.

Meanwhile, toss together the lemon zest, breadcrumbs, and grated parmesan cheese.

As soon as the butter has melted and the liquid is absorbed, toss with the crumb mixture. Season with salt to taste and enjoy soon.
