Lemon Quinoa Salad

 

This simple herby grain salad is brought to us from Dr. Kaycie Rosen Grigel: Quinoa is one of my favorite grains. It is very high in protein, cooks quickly, and is quite versatile. This recipe is quite basic if you are serving it with something with complex flavors, but the addition of seeds, grapes, and herbs can turn it into something fancy. This is also great for dinner as a main or a side dish!

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 3 tablespoons lemon juice
  • 1 tablespoon extra-virgin olive oil
  • ½ teaspoon salt, more or less to taste
  • ¼ teaspoon black pepper
  • 2 tablespoons fresh herbs, such as parsley, marjoram, thyme, sage, basil, mint, etc.
  • ¼ cup sunflower seeds, optional
  • cup grapes, sliced in half, optional

Serving Size: 4 People



 

Preparation Instructions

Place water and quinoa in a saucepan and bring to a boil. Reduce heat to low and cover. Cook about 10-15 minutes until water is fully absorbed. In a small bowl, mix the lemon juice, oil, salt and pepper. Add to quinoa along with the fresh herbs and toss together. Fold in the seeds and grapes and serve hot, warm or cool for lunch on the go.
