Mizuna & Italian Sausage

The bitter baby greens balance perfectly with Italian Sausage, especially if it is a touch spicy. Serve over pasta, rice or polenta.

Ingredients

  • ½ lb italian sausage , links
  • ½ onion, thinly sliced
  • 1 teaspoon olive oil
  • 2 cups mizuna

Serving Size: 2 People

Preparation Instructions

Sear the links of sausage, in a skillet covered, about 5-8 minutes on each side over medium heat.

Pour in the olive oil and toss the onions around the sausage. When the sausage is seared on each side, remove, and continue tossing the onions.

Slice the sausage on a diagonal. Set aside the onions. Add the sausage pieces and sear on each side.

Add the onions back in. Toss. Fold in the mizuna and cook until it is just wilted, about 30 seconds.

Serve.
