Winter

Orange Kissed Squash

 

Mashed up squash receives just a touch of orange zest & juice for a kiss of flavor. Most any winter squash will do: buttercup, acorn, hubbard pumpkin, butternut…
If you have more than a couple pounds of squash, just add more orange zest & juice to your personal taste. Makes amazing leftovers, too.

Ingredients

  • 2 lbs winter squash, more or less
  • 1 orange, small, zest & juice
  • 1 tablespoon butter, unsalted
  • ½ teaspoon salt

Serving Size: 2 People



 

Preparation Instructions

Preheat the oven to 400.

Cut the squash in half and scrape out the seeds & membranes. Place in the oven with a baking dish below to catch any juice from the squash.

Bake for 25-45 minutes until the squash can be easily cut with a spoon. Remove. Cool.

Scrape the squash out and mash slightly with the orange zest, juice, salt and butter/olive oil when it is cool enough to handle. Serve warm or heat it back up until it is hot and steamy.
