Orange Roasted Chicken

 

Roasted Chicken has a lovely flavor on its own, but adding oranges that roast under the skin adds another layer of flavor that takes chicken far from boring. Chicken thighs are best if you are nervous about under cooking your poultry. You can overcook these a tad and they remain moist. If you do not like thighs, use a large chicken breast for two servings.

Ingredients

  • 2 chicken thighs, bone-in or 1 large chicken breast, bone-in
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 orange
  • 3 cloves garlic, cut into slices
  • 1 cup orange juice
  • ½ cup broth
  • 1 teaspoon balsamic vinegar

Preparation Instructions

Preheat the oven to 450.

Sprinkle the entire surface of the chicken pieces with salt and pepper. Place the chicken, skin side up, in a single layer in the prepared pan. Tuck half of the garlic and an orange slice under the skin.

Roast the chicken for 15 minutes. Meanwhile, combine the orange juice, broth, vinegar and remaining garlic. Pour the sauce on top once the chicken has obtained a slightly golden color. Toss in the remaining orange slices. Reduce the heat to 375 and continue to roast checking every 5-10 minutes until cooked through. Ideally, use a thermometer and remove from the oven when it reaches 160-165. Transfer chicken to a warm plate, cover with a foil tent as it will continue to cook and warm up.

Pour the sauce over the chicken and serve.
