Poached Salmon

 

A quick white wine poached salmon adds a touch of sweetness to a flavorful fillet. Reducing the sauce for a few minutes after poaching intensifies all of it. Be sure to use a white wine that you would also enjoy a sip of drinking.

Ingredients

  • 12 ounces salmon, wild, cut in two fillets
  • 1 teaspoon olive oil
  • ¼ teaspoon salt
  • 1 pinch black pepper, to taste
  • 1 cup white wine, more or less
  • 1 teaspoon butter, unsalted, optional, to taste

Serving Size: 2 People



 

Preparation Instructions

Add a drizzle of olive oil to a skillet with a lid over medium heat- you may skip this step if you are using a non-stick pan.

Add the fillets into the pan with the skin side down. Sprinkle with salt and black pepper from a distance to evenly coat the salmon.

Once it begins to sizzle pour in the white wine around the fish until it is just over half way covered. Increase the heat, just slightly to medium-high. Cover with a lid and poach for 6-8 minutes until the flesh can be lightly flaked.

Remove the salmon and increase the heat to high.
Boil wildly until the wine appears a bit thicker and almost syrup-like. Swirl in the butter if desired and drizzle the sauce on top of the salmon.
