Pulled Pork

 

I don’t whip my crockpot out often, but for melt in your mouth shredded pork I adore it. I simply toss it in there with a handful of other ingredients including onions & beets to give it a beautiful hue and flavor. Everything starts in the morning and by the afternoon I just lift it out and it starts to fall apart into gorgeous shreds.

Ingredients

  • 1 onion, thinly sliced
  • 1 beet
  • 2 lbs pork, butt or shoulder
  • 4 cloves garlic, finely minced
  • 1 teaspoon smoked paprika
  • 3 bay leaves
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • ½ cup broth, optional, or more as needed

Serving Size: 6 People



 

Preparation Instructions

Place the onion in the base of the crock pot. Top with the shredded beets. Place the pork shoulder or butt on top. Sprinkle generously with the garlic cloves, smoked paprika, bay leaves, salt & pepper. Cover with the lid and place on high heat for about 3-4 hours or low heat for 5-8 hours. Allow the natural juices from the onion, beets and pork to be the main liquid. Although, if it starts to dry out pour in about 1/2 cup of broth at a time as needed.

It is ready when they pork is falling apart in clumps and shreds. With a fork, help it along while incorporating in the beets & onions.
