Pumpkin Yogurt Parfait

 

Hey pumpkin pie lovers! Yes, you. The one who feels that because a squash is a vegetable that makes Pumpkin Pie a reasonable breakfast food. First, I totally agree. Second, this parfait may be just a tad healthier and easier to put together. Any granola will do, but plan to make your own and use the Molasses-Pumpkin Granola for this instead. Feel free to substitute pumpkin pie spice for all of the spices.

Ingredients

  • 1 cup pumpkin, cooked
  • ¾ cup plain yogurt
  • 2 teaspoons maple syrup, or more to your personal taste
  • 1 teaspoon cinnamon
  • ½ teaspoon ginger
  • ¼ teaspoon allspice
  • 1 tablespoon candied ginger, finely diced
  • ¾ cup granola, preferably the molasses-pumpkin recipe

Serving Size: 2 People



 

Preparation Instructions

Whisk together the pumpkin, yogurt, maple syrup, cinnamon, ginger and allspice. Fold in the candied ginger pieces if using.

Place a few generous scoops of the pumpkin-yogurt in each bowl. Layer on a few tablespoons of granola and repeat until your parfaits are complete.

Enjoy immediately as your granola will soften if you wait too long.
