Red Lentil Garam Masala Soup

 

This red lentil soup comes out various shades further from red, but it is really the strength and freshness of the garam masala that will make this soup. Buy a nice quality blend or make your own from scratch. Beyond this, the Cilantro Coconut Chutney brings out the flavors as the perfect complement.

Ingredients

  • ½ onion, chopped
  • 1 carrot, finely minced
  • 1 stalk celery, finely minced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ¾ cup lentil, red
  • 4 cups water
  • 3 cloves garlic, finely minced
  • 1 inch piece ginger, peeled and finely minced
  • 2 tablespoons garam masala
  • 2 tablespoons butter, unsalted
  • 1 cup coconut milk
  • ¼ cup cilantro, minced, optional

Preparation Instructions

Place the minced onions, carrots, and celery in a saucepan over medium heat. Allow them to warm up for a few minutes and when they start to wilt, drizzle in the olive oil. Saute for a few more minutes until they start to get a bit of color. Stir in the garlic, ginger and lentils. Pour in the water. Increase the heat to high and bring up to a simmer. Once it is bubbling away, reduce to a low simmer. Once it is thick, add the salt and place in a blender and blend until smooth.

Meanwhile, in a small pot or skillet, melt the butter or ghee and garam masala together. Once you can smell the spices, pour in the coconut milk, bring up to a low simmer. When the soup is blended, stir in the spiced coconut milk. Finish with the cilantro. Taste. Adjust the salt and add more cilantro if desired.
