Rosemary Azuki Beans

 

Azuki beans cook up fairly ‘fast’ compared with other dried beans, but that still means about an hour. Simmering with a huge stalk of rosemary gives them a more romantic flavor. If you want to skip straight to the can, just toss the beans with the garlic-herb oil at the end instead of simmering.

Ingredients

  • 2 sprigs rosemary, each about 6+ inches long
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • ½ cup azuki bean
  • ½ teaspoon salt, more to taste

Serving Size: 3 People



 

Preparation Instructions

Soak the dried azuki beans overnight.

Drain. Add fresh water, half of the rosemary and bring up to a boil. Reduce to a simmer for 40 minutes. Check and continue to simmer until tender.

Meanwhile, mince up the remaining rosemary and garlic.

Drain the beans. Add the garlic, rosemary, olive oil and salt to the pan and bring up to a sizzle over medium heat. Add in the beans and toss lightly until thoroughly coated. Taste and add a pinch more salt if desired.

Serve alongside a few cooked vegetables.
