Sardine Sandwich

 

If you are a tuna sandwich fan, try this more sustainable healthy option. Sardines have a lower mercury level and put less strain on the environment then tuna. Once they are mashed up with a bit of mayo you will hardly know the difference. Try smoked sardines for a bit of extra flavor.

Ingredients

  • 1 tablespoon mayonnaise
  • 1 tablespoon greek yogurt, or mayonnaise
  • 1 lemon, zest only, optional
  • 1 carrot, peeled and shredded
  • 1 pinch black pepper, optional
  • 1 can sardines
  • 2 slices whole wheat bread, or gluten free
  • 1 teaspoon mustard
  • 2 leaves lettuce

Serving Size: 1 Person



 

Preparation Instructions

Whisk together the mayonnaise, yogurt, lemon zest, shredded carrots, salt & pepper to taste.

Drain the sardines. Dump into the sauce and mash and stir to combine.

Spread the mustard on the bread. Top with the washed & dried lettuce. Add the sardines and sandwich together.
