Spring

Seared Halibut

 

Halibut is a more expensive cut of fish although it is in abundance in some parts of the country such as Alaska. It is an almost steak-like fish but with a delicate white fish flavor. The trick is to not flip it until it becomes slightly loose in the pan. It will be easier to turn and the moisture will be locked in under the golden crust.

Ingredients

  • 10 ounces halibut fillet, cut into 5 ounce fillets
  • 2 teaspoons vegetable oil (high heat), divided
  • 1 teaspoon black pepper
  • 1 teaspoon salt

Serving Size: 2 People



 

Preparation Instructions

Place a skillet over medium high heat. Season the Halibut on both sides with salt and pepper. Drizzle in half of the vegetable oil and place the fish, down within the oil. Sear for 3-4 minutes until the fish can be gently wiggled loose and flipped over. Add the remaining oil and sear the other side for 3-4 minutes until the fish is lightly golden and slightly firm but not hard to the touch in the center.
