Shrimp Scampi

 

A classic italian dish with a buttery-garlic sauce. We have livened it up with fresh, melting tomatoes. Whole grain pasta actually compliments it as well- don’t hesitate to try it.

Ingredients

  • 8 ounces pasta, whole wheat linguine, spaghetti or angel hair
  • 4 tablespoons butter, unsalted, divided
  • 4 tablespoons olive oil, divided
  • 4 cloves garlic, finely minced or pressed
  • 1 lb shrimp, large-size, peel and devein
  • 1 lemon, zest and juice
  • ½ cup white wine
  • 1 tomato, large, cut into chunks
  • ¼ cup fresh herbs, finely minced, basil, parsley, oregano or thyme are lovely

Preparation Instructions

Bring a large pot of water to a boil first. Add in pasta and cook according to the package instructions, about 6-10 minutes until el dente.

Place a large skillet over medium heat. Add in half of the butter, olive oil and minced garlic. Simmer the garlic in the saucy fat for about 30 seconds. Pat the shrimp dry and place in the pan of butter/oil. Spread out, so the pieces are not overlapping. Sprinkle each with a light sprinkle of salt and pepper. When the shrimp just starts to sear on one side, flip over and sear on the other side. Sprinkle again with salt and pepper and this time add in the lemon zest. Remove the shrimp, set aside.

Add the remaining butter, olive oil, white wine, & lemon juice. Boil down slightly for 1-2 minutes. Drain the pasta and place in the butter sauce, tossing lightly. Toss in the tomatoes and shrimp. Serve immediately with a sprinkle of fresh herbs.
