Sloppy Joes

 

Why choose the end of summertime to make these cafeteria mystery meat favorites? Because you can pack them full of all those summer veggies that need a home. Consider zucchini, peppers, carrots, onions, and more unusual veggies like kohlrabi and tatsoi. Use what you have available and get chopping! After they are a finely chopped mess, saute and hide them in this drippy, nutrient packed and kid-friendly meatwich.

Ingredients

  • 1 teaspoon vegetable oil (high heat)
  • 1 onion, finely chopped
  • 1 bell pepper, finely chopped
  • 1 cup carrot, shredded or zucchni, kohlrabi, squash, beets, other root vegetables, etc
  • 1 cup broccoli, finely chopped or cauliflower, dark leafy greens, etc.
  • 8 ounces ground beef, or bison or turkey
  • 14 ounces roasted crushed tomatoes, can
  • 2 tablespoons ketchup
  • ½ tablespoon worcestershire sauce
  • ½ tablespoon red wine vinegar
  • 1 tablespoon brown sugar, or 1/2 t sugar & 1t molasses
  • ¼ teaspoon salt, or more to taste
  • 1 pinch black pepper
  • 4 hamburger buns, whole wheat

Serving Size: 4 People



 

Preparation Instructions

Place a pot or dutch oven, over medium heat. Drizzle in a splash of the oil, once warm add in the chopped onions and bell pepper. Saute for 5-10 minutes until the vegetables have softened and become slightly golden. Remove the onions & peppers, set aside.

Add in another drizzle of oil and saute the shredded vegetables for 3-5 minutes until lightly golden. Remove & set aside with the onions & peppers.

Add the remaining amount of oil and sear the beef, break a part as it browns. Once there is no longer any pink, pour in the remaining ingredients, tomatoes, ketchup, Worcestershire sauce, vinegar, brown sugar (or molasses & sugar), salt and pepper. Fold in the vegetables, allow it to simmer on medium for at least 10 minutes. Reduce to low and simmer until you are ready for dinner, warm up the buns briefly in a toaster or warm oven. Stuff the meat inside the buns and enjoy.
