French Veggie "Fries"

Take any potato size vegetable that you can cut into a long ‘French fry’ shape, toss it with a touch of oil and roast on high heat until they crisp up lightly and are tender in the middle. Grab your favorite dipping sauce and the kid in you will love this fun way to get veggies on your plate.

Why choose the end of summertime to make these cafeteria mystery meat favorites? Because you can pack them full of all those summer veggies that need a home. Consider zucchini, peppers, carrots, onions, and more unusual veggies like kohlrabi and tatsoi. Use what you have available and get chopping!
