Smoked Salmon Salad

 

Creamy fish salad with only half of the salmon smoked, perfect on a bed of lettuce or bread. Shredded carrot is added for extra nutrients, crunch and sweetness. Add as much as you like. Leftover salmon works well or canned wild salmon is reasonable since you will doctor it up with tasty smoked salmon. After a can of salmon is drained you will have the perfect amount about 2-3 ounces remaining.

Ingredients

  • 2 tablespoons mayonnaise
  • 1 tablespoon plain yogurt, or more mayonnaise
  • 1 teaspoon dijon mustard
  • 1 teaspoon dill
  • ounces salmon, wild, fresh or canned/bagged
  • 2 ounces smoked salmon , torn into bits
  • 1 carrot, peeled and shredded
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 teaspoon capers, optional, garnish
  • 4 leaves lettuce, washed and dried or whole grain bread for sandwiches

Serving Size: 2 People



 

Preparation Instructions

Whisk together the mayonnaise, yogurt, dijon, and dill. Crumble both salmons in to the bowl and fold in part of the shredded carrot. Taste. Add more shredded carrot to your preference.

Add salt and pepper to taste. And more dill if you like.

Serve on a bed of lettuce or stuff in between bread with the lettuce as well.
