Spinach-Potato Nuggets

 

Potatoes & spinach come together in mini patties perfect for little hands and big hands alike.

Ingredients

  • 2 cups potatoes, peeled and cubed
  • 2 cups spinach, fresh, roughly chopped
  • ½ cup cottage cheese
  • 1 egg
  • 1 cup monterey jack , or cheddar, shredded
  • ¾ cup flour, whole wheat or brown rice flour
  • ¼ teaspoon salt, more to taste if desired

Preparation Instructions

Place the peeled and cubed potatoes in a saucepan. Cover with cold water and bring up to a boil over high heat. Simmer for about 15-20 minutes until the potatoes are easily mashed with the back of a fork. Drain off the water.

Place the spinach in a large bowl. Add the potatoes and mash together, allowing the heat from the potatoes to cook the spinach slightly.

In a separate bowl, whisk together the cottage cheese and egg. Preheat the oven to 375.

Add the shredded cheese, flour and salt to the potatoes. Fold them together until well incorporated. Taste. Add a bit more salt if desired.

Fold in the eggs and cottage cheese next.

Dollop the mixture on to a baking sheet lined with parchment or foil. Place in the oven for 10 minutes. Flip over and bake for about 5-10 more minutes until the edges on each side are golden.
