Teriyaki Bok Choy Noodles

 

A simple teriyaki sauce is tossed with long strips of bok choy and noodles for an easy side. Just add a bit more protein or veggies for a complete dish. Udon noodles are the best for this dish but rice noodles or even fettucine work well instead.

Ingredients

  • 2 tablespoons soy sauce, tamari , wheat-free for a gluten-free option
  • 2 tablespoons mirin
  • 2 tablespoons honey, or agave nectar for a vegan option
  • 2 cloves garlic, minced
  • 1 inch piece ginger, cut in a couple pieces
  • 6 ounces udon noodles
  • 1 head bok choy
  • 1 tablespoon vegetable oil (high heat)
  • 1 teaspoon sesame seeds, optional for garnish

Preparation Instructions

Place the soy sauce, mirin, honey, ginger and half of the garlic, in a small saucepan. Bring up to a simmer for about 5-10 minutes until the sauce is slightly thick and cut in half.

Meanwhile, boil water for the noodles.

Trim the bok choy, remove the leaves from the head, wash and dry. Stack them up and cut into long thin shreds.

Salt the boiling water and add the noodles. Cook according to the package instructions, usually about 4-8 minutes.

In a wok or large skillet over medium-high heat, add the rest of the minced garlic and the oil. When the garlic starts to sizzle, toss in the bok choy. Sear for a few seconds. Toss. Sear and toss again, until the bok choy is wilted. Discard the pieces of ginger and then pour the teriyaki sauce over the bok choy.

Drain the noodles and shake to dry well. Toss with the bok choy and sauce.

Taste. Add a pinch of salt to taste if desired. Garnish with a sprinkle of sesame seeds.
