Summer

Tomato Basil Sandwich

 

This really is THE sandwich for summer. I love a BLT, but this is even simpler, relying on the glories of summer ripe tomatoes and a simple as can be basil spread. We tone the mayo down with a bit of yogurt, but feel free to use all Greek yogurt or all mayo depending on your preference, especially if you want it dairy free. Of course use gluten-free bread for that option.

Ingredients

  • 1 tablespoon mayonnaise
  • 1 tablespoon greek yogurt, or just mayo
  • 2 tablespoons fresh basil, finely chopped
  • 1 pinch salt
  • 1 pinch black pepper, fresh if possible
  • 2 slices whole wheat bread
  • 1 tomato, sliced paper thin

Serving Size: 1 Person



 

Preparation Instructions

Whisk together the mayonnaise, greek yogurt, fresh basil, salt and pepper. Spread on each slice of bread.

Fill with the sliced tomatoes and any other veggies that your heart desires.

Sandwich together and sink your teeth in.
