Winter

White Wine Chicken with Sweet Potatoes & Onions

 

Chicken & sweet potatoes are roasted whole in the same dish with a generous douse of white wine. Onions are cut into large strips and accompany this easy to toss together flavorful meal.

Ingredients

  • 1 whole chicken, about 3-5 pounds
  • 2 lbs sweet potato, 3-4 small or narrow is ideal
  • 1 onion, cut into thick strips
  • 1 tablespoon kosher salt, or more as needed
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup white wine

Preparation Instructions

Preheat the oven to 425.

Pour the olive oil in a roasting pan or dutch oven and rub the chicken in the oil on each side. Season the chicken generously with the salt and pepper. Sprinkle it on from at least a foot or two above, this will disperse the seasonings more evenly.

Arrange the whole sweet potatoes and onions around the chicken. Pour the white wine over them. Roast for 30 minutes. Check with a thermometer in the base of the leg & thigh. Also, check in a thick part of the breast. Continue to roast, checking the temperature every 5-10 minutes until the lowest temperature is 160.

If the sweet potatoes and onions could bake a bit longer, than remove the chicken from the pan. Toss to coat the sweet potatoes in the sauce & juices. Return the casserole to the oven and roast while the chicken rests for about 10 minutes.

Cut the chicken through the joints and serve pieces with the sweet potatoes and onions. Drizzle some of the pan juices on top of everything as well for a bit extra flavor.
