Yogurt Cheesecake

 

This is a perfect way to not only end your day, but to start it. Yes, I just told you to eat dessert for breakfast, so hear me out. This holds more protein and less sugar than the average American meal of pancakes, cereal, waffles or muffins & scones. We even use the breakfast sweetener of choice: maple syrup and we highly recommend only using a real maple syrup. Serve it with fruit, or not, but always be sure to enjoy at least one slice for breakfast.

Ingredients

  • cup almond flour, or almond meal or another favorite nut flour
  • 3 tablespoons butter, unsalted, melted
  • 1 tablespoon sugar
  • ½ teaspoon salt
  • 3 cups greek yogurt
  • 4 eggs
  • ½ cup maple syrup, or honey
  • 1 tablespoon cornstarch, or arrowroot powder
  • 1 teaspoon vanilla, or almond extract

Serving Size: 6 People



 

Preparation Instructions

Preheat the oven to 350.

Combine the almond flour, melted butter, sugar and salt in a mixing bowl. Dump it into a spring form pan and press it firmly until it is even and mostly flat. Place in the oven for 10 minutes until slightly baked.

Meanwhile, whip together the greek yogurt, eggs, maple syrup, cornstarch and vanilla until evenly combined. When the crust is ready, pour the batter into the crust.

Return to the oven and bake for 50-60 minutes until the center of the cake has just a slight jiggle to it. Turn off the oven and allow the cake to cool for another 20 minutes. Remove from the oven and cool for another hour. Then cool completely in the fridge for at least 3 hours up to overnight.

Slice in and enjoy with fresh fruit or a favorite fruity syrup.
