Apricot Chile Cream

The creamy sweetness of apricots are whipped up with chiles and yogurt to create a tangy-spicy-bright substitute for sour cream. If you do not have a blender, mince the ingredients small and then beat it all together with a wire whisk until smooth. Make this vegan or dairy-free by using the cream that floats to the top of the coconut milk. Just scrap it off and use the remaining milk for something else.

Leftovers from the Apricot Roast Chicken or even the Apricot Stuffed Pork will work well in this chunky, creamy salad. Alternatively, simply rehydrate the apricots in hot water and use cooked, shredded chicken.

This beautiful roast (inspired by Mark Bittman’s Fig Stuffed Pork) is surprisingly easy to make and a bit of a show stopper. If you feel intimidated by the cutting and stuffing of the pork, simply surround the roast with the soaked apricots instead.
