Sun-Dried Tomato Meatloaf

Italian herbs, pine nuts & sun-dried tomatoes liven up this meatloaf, which works well with ground bison, beef or even turkey. When using oats, you can skip the typical breadcrumbs. Plan to use quick-cooking oats. If you only have rolled oats, toss them in your blender for a few seconds. If you do not have a loaf pan handy simply mound it up and form it into a log in the center of a baking dish.

Sweet Potato Pancakes

Do you have leftover sweet potatoes? Even if they are leftover with flecks of nuts and spices just scoop up a cup and toss it in this batter. The original recipe makes enough for four generous servings, so if you have extra freeze them on a baking sheet and package in a sealed bag to enjoy later. Just pop them in the oven or toaster until heated through.

Thai Almond Broccoli

This is more or less a salad with a nutty-thai sauce. Use peanut butter or even sunflower butter instead of the almond butter. It is tasty chilled as a main dish salad with a few extra veggies or serve it hot over rice.

Thai Melon Salad

Spicy, salty and a touch sweet, this Thai-inspired melon & cucumber salad is cool, refreshing and on fire at the same time. You could potentially add more veggies such as bell peppers or bean sprouts if desired.

Thai Peanut Vegetables

A simple peanut sauce livens up stir-fried veggies. Add a protein of your choice such as chicken, tofu or shrimp which are all lovely.
