Week of September 19, 2010

The continued warm weather has me daydreaming of sitting outside at a bustling bistro, sipping on some sparkling goodness and enjoying some of these simple dishes.

At the French bistro I would enjoy the Ratatouille with Purslane, Beet, & Tomato salad. A few pieces of French bread and a favorite creamy cheese will complete this meal.

Asian bistro’s seem less obvious, but I picture this week’s Asian Plum & Beef Lettuce Wraps on their menu. Indulging in a bit of stone-fruit with a little Asian inspiration makes these wraps naturally sweet.

Then to Italy to dine al fresco, with the Pesto Pasta Salad and Gazpacho.

Next find yourself sitting under those blue & white awnings of the Greek flag with the make-at-home, pan-fried Falafels, a touch of Tahini Sauce and a veggie packed salad. A hunk of Feta cheese will add some fun dairy to this otherwise Vegan meal.

Alas, it’s not all about the Bistro style dining. Especially if you happen to be swimming in Zucchini still. Lay thin slices of the green squash on top of Halibut and wrap it all up in bacon. Oh yes, let the salty goodness permeate the fish & zucs. Have extra bacon? Make BLT’s while tomatoes are still divine.

Zucchini takes another starring role in the Marinated Salad and leftovers can be played up with a touch of salami and provolone as the Zucchini Antipasto Salad. Perfect main dish salad to take on the go for lunch.

Bruschetta Grilled Chicken is a simple way to make Chicken shine as it relaxes under a mess of juicy tomatoes, basil & garlic.

For breakfast, use up the end of summer peaches in a creamy smoothie. Enjoy it on its own or pair it with the Smoked Salmon & Yellow Squash Egg Scramble.

As an incredible treat this week, whip up this simple Almond Sugar-Plum Kuchen. Any stone-fruit will do but if you find the Italian Prune Plums you are set.

Whether the temperature is still beautiful enough for al fresco dining or you need to take your plates inside instead, most of these meals come together quickly to use up the end of the warm season’s deliciousness.

Cook seasonally. Eat consciously.
