Avocado Wasabi Salmon with Sesame Bok Choy

Steam the brown rice first. Slice the veggie and have all ingredients prepped and ready to go. Whirl up the Avocado Wasabi Cream. Arrange the salmon on a baking sheet with the lemon. Place in the oven. Saute the Sesame Stir Fry vegetables. Serve the salmon on top of the brown rice and stir fry with a generous dollop of the Avocado Wasabi Cream drizzled across the top.

There are several methods for preparing rice. Brown rice especially is a bit more time consuming as it still contains the nutrient packed outer grain. This recipe contains three different methods for preparing brown rice. Try them out and stick with the one that produces the rice just the way you like it.

These methods can work for long, short, medium or other types of brown rice.

Sesame Stir-Fry

Any variation of vegetables will do, but in the winter carrots, broccoli and a bunch of greens, such as bok choy work well. Add more spice or other flavors as you desire, this is just a base recipe to get you started so let your imagination and taste buds lead the way.

Avocado-Wasabi Cream

Dollop this sauce along sushi, on a salad or as a dip. Adjust the wasabi as you like it, the avocado will make this creamy and luscious. If you are not a fan of spice, start with half of the wasabi and increase as desired.

Lemon Salmon Fillets

If you have a Cedar-Plank this is an excellent place to use it. If not, no worries, the salmon comes together quickly and with little mess. Add a few slices of lemon, pinch of dill and your protein is complete.
