Leftover stir-fry or a handful of veggies destine for a wok will happily roll up inside this thin egg omelette. Double the eggs for a thicker, fluffier version. If you are making more than one serving, only make one omelette at a time per pan. In other words, use an extra skillet for two or more servings.
