Coconut Granola & Coconut Sweet Potatoes

The Coconut Granola can be made well in advance. Or at the very least start baking it about an hour or more before you start cooking the sweet potatoes. Serve the about 1/2 cup of Granola on top of each serving of Sweet Potatoes and then finish with the whipped coconut cream. Add a drizzle extra maple syrup if you rather make this for dessert.

No form of coconut is left untouched for this sassy granola. The only other addition are dates, but if you prefer trying out coconut sugar instead, by all means go for it!

Creamed Coconut Sweet Potatoes

Coconut milk, flakes and oil are whipped together to make this delicious breakfast, side dish or add a drizzle extra maple syrup and it will be dessert. If you have already cooked sweet potatoes, this will come together even faster.
