Sun-Dried Tomato Meatloaf with Roasted Sweet Potatoes & Florets

Preheat the oven and assemble the meatloaf. Bake. Chop the sweet potatoes, toss and bake on the rack just below. Add the cauliflower and broccoli according to the recipe. They should be done close to the same time.

Sun-Dried Tomato Meatloaf

Italian herbs, pine nuts & sun-dried tomatoes liven up this meatloaf, which works well with ground bison, beef or even turkey. When using oats, you can skip the typical breadcrumbs. Plan to use quick-cooking oats. If you only have rolled oats, toss them in your blender for a few seconds. If you do not have a loaf pan handy simply mound it up and form it into a log in the center of a baking dish.

These three vegetables balance each other nicely and can be cooked altogether with a splash of olive oil, salt & pepper bringing out the caramel sweetness of each vegetable.
