Sweet Potato & Bean Shepherd's Pie with Citrus-Beet Salad

Bake the sweet potatoes. Make the chili. While it simmers, slice the vegetables and make the dressing. Assemble the Sweet Potato & Bean Shepherd’s Pie and bake. Toss the salad and serve together.

Sweet Potato & Bean Shepherd's Pie

Thick & rich chili is topped with creamy, lime spiked sweet potatoes and baked into a casserole. Your favorite chili-style bean will do, black, red, pinto or your favorite combo. Add more or less spices to the bean mixture until it tastes just the way you prefer your chili. The leftovers are perfect eaten solo or stuffed into tortillas seared in a skillet quesadilla style.

Citrus & Beet Salad

Shredded beets, carrots, grapefruit and blood oranges create a colorful palate of crimson & amber splashed throughout the lettuce. If blood oranges are a challenge to find, simply use regular oranges.
