Braised Fennel, Turnips, White Beans & Blood Orange Quinoa

If making this with already cooked beans or a pressure cooker, this dish comes together fairly quickly.
1. Start with the beans if cooking from scratch.
2. Saute the fennel & turnips for a few minutes.
3. Put together the quinoa to simmer.
4. Finish braising the vegetables, toss with the beans and serve on top of the Blood Orange Quinoa.

Braised Fennel, Turnips & White Beans

Late winter to early spring brings turnips & fennel which become sweeter and tender through the braising process. This recipe starts with dry beans, but if you have a can, they are already cooked, or you have a pressure cooker that will mean dinner is ready in less than 30 minutes. Leftovers are perfect in this Fennel, Turnip & White Bean Spread.

Blood Orange Quinoa

Cook quinoa up in a bath of water and orange juice to give a tangy, citrus undertone. When done, toss in segments of oranges for even more delight. While blood oranges add a unique flavor, most any other orange will work too if you cannot find this rosy variety.
