Fennel Blood Orange Salad with Quinoa

1. Simmer the quinoa.
2. Slice the blood oranges for the quinoa and the salad.
3. Slice the fennel, toss with the oranges and dressing.
4. Package together or individually for lunch on the go.
5. Add a sprinkle of nuts or goat cheese for a bit more protein.

Blood Orange Quinoa

Cook quinoa up in a bath of water and orange juice to give a tangy, citrus undertone. When done, toss in segments of oranges for even more delight. While blood oranges add a unique flavor, most any other orange will work too if you cannot find this rosy variety.

Fennel & Blood Orange Salad

A Sicilian favorite tosses together these two ingredients for a simple, elegant salad. But, if you insist on lettuce, go for it. Just plop these sweet, floral, licorice-y flavors on top. You may even consider something bitter as the leafy green, such as arugula to balance the sweetness.
