Cabernet Cocoa Sauce

Cabernet is reduced with a bit of cacao or cocoa powder giving this savory sauce an almost chocolate ganache feel, perfect to drizzle on chicken or steak. For a dairy-free option, substitute a flavorful olive or coconut oil.

Ingredients

  • 1 teaspoon olive oil
  • ½ onion, thinly sliced
  • 2 cups red wine, preferably cabernet
  • 2 tablespoons cocoa
  • 2 tablespoons butter, unsalted, coconut oil or olive oil
  • ½ teaspoon salt
  • 1 pinch black pepper

Serving Size: 2 People



 

Preparation Instructions

Sauté the sliced onion in the olive oil in a saucepan over medium heat. Once wilted, pour in the red wine. Increase the heat to medium-high and bring to a simmer. Add the cocoa powder. Simmer for about 8-12 minutes.

Once the sauce is reduced in half, turn off the heat and add the butter or coconut oil while stirring quickly. Add salt and black pepper to taste.
