Rocket Date Salad

Rocket, better known around here as arugula has a spicy, slightly bitter bite. Melting dates & oranges together into a syrupy, sweet dressing balances the peppery rocket even allowing it to wilt slightly. The creamy goat cheese makes this salad dessert-like. We tested the recipe with blood oranges, but regular oranges will work perfectly too.

Ingredients

  • ¼ cup water
  • 4 dates
  • 1 tablespoon olive oil, extra virgin
  • 1 teaspoon honey
  • 2 oranges, small, or 1 large
  • 1 pinch salt
  • 1 pinch black pepper
  • 3 cups arugula
  • 2 ounces goat cheese

Serving Size: 2 People



 

Preparation Instructions

Bring the water and dates up to a simmer over medium-high heat. When the liquid is pretty much absorbed, whisk in the olive oil, honey, salt & pepper, to taste. Peel and roughly chop the oranges- whisk in the juice and flesh in the dressing, breaking it up further.

Toss the arugula, goat cheese and date dressing together. The arugula will wilt- no problem. Enjoy as soon as possible.
