Cacao Almond Truffles

As satisfying as a decadent creamy truffle, these are actually raw & vegan. Perfect for a sweet treat, snack for children or for a healthy boost on a hike or post work out. The recipe calls for a bit of water, but make these a special treat by adding your favorite truffle booze instead such as irish cream, amaretto, brandy or what have you.

Ingredients

  • cup almond, raw
  • ½ cup cacao nibs, or more cocoa powder
  • ¾ cup cocoa
  • cups date, pitted
  • 1 teaspoon almond extract
  • ½ teaspoon salt
  • 2 tablespoons water, or amaretto, brandy, or booze of your choice

Serving Size: 6 People



 

Preparation Instructions

Place the almonds, cacao nibs and cocoa in a food processor. Whirl around until any large pieces are broken up. Add the pitted dates, almond extract, water and salt.

Pulse several times until a soft paste is formed. Add splashes of water (or booze!) to help it become soft and not dry as you pulse the mixture.

Scoop out 1/2 to 1 ounce balls. Roll in your wet hands until they are smooth and round. If desired, roll them in more cocoa powder until they are lightly coated and dusted.

Shake off and enjoy. They will store tightly sealed in the fridge for a couple weeks or in the freezer for a few months.
