Marinate and bake up the tofu. Meanwhile chop up the slaw ingredients and toss. Chill and take on the go for lunch.

One of the easiest ways to prepare tofu, since you simply toss it in the oven after drenching it in soy sauce. Great to take chilled and on the go or cut into pieces and toss with a stir fry.

A tangy, bright dressing drenches thin strips of tender bok choy with a sprinkle of sesame seeds and strips of nori.
