Simply Guacamole

from Winter Nachos, the Week of March 4, 2012.

With only a few ingredients this easy guacamole highlights the flavors of the avocados. This is a great base and if you like additional spice or flavor, start with this and add to your heart’s content. When storing, squeeze a bit of the lime on top and the color will retain better.

Ingredients

  • 1 avocado, ripe, soft to the touch
  • 1 lime
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 tablespoon cilantro, chopped, optional

Serving Size: 2 People

Preparation Instructions

Cut the avocado in half. Whack the pit with your knife, twist it out and remove. Cut cross marks into the halves without breaking through the skin, mash up with a fork and scoop out, scraping every last bit of the delicious, green stuff.

Juice the lime and drizzle in about 1 teaspoon to start. Mash together with the salt, pepper and cilantro. Taste. Add more lime juice if desired.

If storing, drizzle on a splash of the lime juice and/or cover the surface with plastic wrap.
