Corned Beef Sandwich

Corned beef leftovers smashed between Irish Soda Bread. Cooked cabbage will also work well instead of the cooked carrots.

Ingredients

  • 1 teaspoon dijon mustard
  • 2 slices irish soda bread
  • 4 slices corned beef, thin
  • 2 slices cheddar cheese, ideally irish killarney's white cheddar
  • 1 carrot, cooked with the corned beef

Serving Size: 1 Person



 

Preparation Instructions

Spread the dijon on each slice of bread. Fill with the slices of corned beef, cheddar cheese and press the cooked slices of carrots into the bread.

Sandwich together.
