Corned Beef Sandwiches with Shamrock Butter

Bake the Irish Soda Bread if not already done. Whip up the shamrock butter and slice leftovers of Corned Beef and Cabbage. Smear the shamrock butter on a couple slices of bread and fill with the Corned Beef and veggies.

Irish Soda Bread

This bread comes together so quickly you will be tempted to make it daily. Only five simple ingredients. No rising. No real kneading. Just slap it together and place in the oven ideally on a cast iron pan or a stone for a nice golden crust on the bottom.

'Shamrock' Butter

Wood sorrel is often mistaken for the traditional Irish shamrock, so in this spirit whip up your own ‘shamrock’ butter with the bright, almost lemony sorrel instead. If you had visions of mint shamrock shakes when you read shamrock butter and want to try mint butter instead, I would welcome the idea, although I have yet to try it myself.
