Avocado Wasabi Spring Sushi & Root Salad

Cook the rice if not already done. Slice up the roots for the salad and prepare the filling for the handrolls. Assemble the handrolls & toss the salad. Blend up the Avocado Wasabi. Scoop out half for dipping the handrolls. For the salad, make it thinner with more orange juice and a bit of olive oil until it is your desired texture. Drizzle on the salad just before serving.

These seaweed wraps come together quickly once all of the ingredients are ready. You can even make it a sushi party by preparing your favorite seasonal veggies into strips in advance as well as any other additions you enjoy in your sushi rolls. Place everything at the table and let each person make their own.

Spring Root Salad

This is a tossed salad of greens & thinly sliced spring root vegetables. Left undressed and sealed well in the fridge this salad will last several days providing you with quick veggies whenever you need. Use a favorite dressing to top it or do it Italian style- drizzled with a beautiful extra virgin olive oil and an aged thick balsamic vinegar.

Avocado-Wasabi Cream

Dollop this sauce along sushi, on a salad or as a dip. Adjust the wasabi as you like it, the avocado will make this creamy and luscious. If you are not a fan of spice, start with half of the wasabi and increase as desired.
