Bok Choy Sushi Bowl

Cook the rice first. As it simmers away, chop the bok choy and toss in the dressing to create the slaw. Next, thinly slice the remaining vegetables for the sushi bowl and whip up the Avocado Wasabi Cream. Serve the Bok Choy Slaw on top of the Sushi Rice Bowl with the remaining vegetables and generous dollop of the Avocado Wasabi Cream.

Start with brown sticky rice and add thinly sliced, seasonally fresh vegetables including radishes, carrots, green onions, and whatever is delicious and available to you. This pairs beautifully with the Avocado Wasabi.

A tangy, bright dressing drenches thin strips of tender bok choy with a sprinkle of sesame seeds and strips of nori.

Avocado-Wasabi Cream

Dollop this sauce along sushi, on a salad or as a dip. Adjust the wasabi as you like it, the avocado will make this creamy and luscious. If you are not a fan of spice, start with half of the wasabi and increase as desired.
