Bright & Vibrant Seafood Enchiladas

Toss the whole sweet potatoes in the oven first. Simmer & blend the Brilliant Green Enchilada Sauce. As soon as possible, start cooking the veggies for the enchilada filling. Roll up, smoother in sauce, and bake. While the enchiladas bake, mash & flavor up the sweet potatoes. Dollop on sour cream or avocados if desired.

Spicy chipotle mixed with sugary roasted sweet potatoes is a simple side for Mexican dishes instead of Spanish rice. Use chipotle peppers in adobe sauce, chopped up, or chipotle powder. Add more or less spice to your personal taste.

Packed not only with tastiness from the sea, but these enchiladas love up spinach & mushrooms, too. Use corn tortillas to make it gluten free. Double check Seafoodwatch before making your fish purchases, most likely farm-raised tilapia, US Shrimp and most wild-caught crab are your best bets for this dish.
